Windsor Deli: Zucchini Slice

Spring is definitely on the way here in Melbourne and it is trying so hard to bust out of the Winter dreg!

So with that in mind I have been getting some really cheap Zucchinis at the moment and it was time for Zucchini Gluten Free Slice!

(If you want to make this slice you can do it with plain flour instead of the gluten free variety!)

Windsor Deli: Almond and Apricot Slice

My mum has coughed for most of her life. Coughed because of anything and everything.....coughed when waking up; coughed after drinking wine; coughed when cooking; coughing, coughing, coughing.....and noone knew (doctors) what was wrong. And when I became a chef and started learning about intollerances and allergies Mum and I thought it might be from gluten. After tests and more tests, Mum was told she was gluten intollerant. Surprise, surprise


You have heard this story before right?




So I have altered the Bakewell Slice to gluten free.....bet you can't taste the difference....and if you don't do gluten free just substitute the gf flour for plain flour.

Windsor Deli: Sweet Gluten Free Pastry

I have people ask me about the gluten free flour that we use at the deli almost everyday.

"I make it myself"

"What????"

"Yeah it is really easy....let me tell you..."

So many customers are suprised when I tell them that it is only three ingredients, and they can buy them and just make up a batch of plain gluten free flour themselves.

Windsor Deli: Thai Herbal Soup

Alan and I went to Thailand in June.

Belated honeymoon (a year late); needed holiday from the deli and in desperate need of some Vitamin D (fluro lights for a year don't count!).

One of the main things that we wanted to do was go to a Thai Cookery School.

We learnt some gorgeous dishes from wonderful Thai Chefs and this one is my favourite, Thai Herbal Soup or Kaeng Leang.

The biggest tip for this dish: Buy Black Tiger Prawns, they are perfect for this dish.

So if I was to go into your fridge what would I find?

Tomato Sauce?

Yes.

I thought so.

But you know the difference between the one in my fridge and the one in yours?

Mine is homemade and gluten-free!

Windsor Deli: Gluten free Garibaldi






"Squashed fly slice" or "Fly cemetary" to so many Australians. What a terrible name for something so buttery and flaky and fruity!

It is called Garibaldi and I found it in a book that my Dad brought back from America for me a few years ago. I started making it at the deli about 6 months ago when I needed a shortbread that I thought kids could take to school and I found that the older generations just loved it as it brought back so many memories of the version of the English Garibaldi Slice!

The great thing about this buttery shortbread is that I have now made it into a gluten free version. I know that it will work well with your cup of tea in the morning or for a great morning tea to take to a friends house.

welcome: Windsor Deli.

Remember I mentioned Katrina Higham a while back, the owner of Windsor Deli in Victoria? Well, we've been emailing back and forth and have decided that Windsor Deli will be making regular posts here on the hot toffee blog - yay! So, the plan is that Katrina will share some of the gluten free recipes she's made in pictures + words linking back to her blog with the full recipe {we figure by doing so we can reach more people who have to live the gluten free life = sharing the love}. The first post will be on the 21st of this month. Please make Katrina feel welcome by leaving comments here or on the deli blog and please, please let us know your experience making the recipes. Windsor Deli and gluten free..

A couple of months ago my brother mentioned that his good friend, Katrina was trialing gluten free food and was keeping a record of this on her blog..I was instantly interested as Katrina and her husband Alan are both chefs and own Windsor Deli in Windsor, Victoria. I visited the Windsor Deli blog and tried the muffin recipe within a couple of days. I was pleasantly surprised as a lot of gluten free food is lacking in texture....but these apple muffins were fluffy AND yummy!! (sorry no photos as they were gobbled up very quickly)







After contacting Katrina to express my excitement about what she and Alan were doing she kindly sent me a batch of the GF flour they make along with some hand written recipes!

I've since tried several of Windsor Deli's Gluten Free recipes including the pancakes, gnocchi and choc caramel tart - the textures and flavours are amazing which has inspired me to cook more which has ultimately reignited my passion for food and cooking. I can't wait to try these Souffles, my mouth waters just looking at the photos..yum.

Katrina is currently working on a gluten free pizza base recipe so I'll keep you posted. (I know there are a few friends out there who are also living life gluten free so I will aim to photograph and document the recipes I try)
